Best Fall flavors to enjoy right now: Recipes and Trader Joe’s favorites
I’ve got Fall on the brain even if the Fall weather has yet to arrive where I live. While I patiently wait to feel that cool autumn breeze I’ve been busy with all the flavors of Fall. Since most of my days are still spent at home thanks to Covid and being a stay at home mom, it has inspired lots of cooking and baking to get us in the Fall mood. Not to mention one of my biggest Trader Joe’s shopping trips of the year for everything pumpkin! If you need a little inspiration right now here are some of my favorite recipes for the best Fall flavors and a few of my seasonal Trader Joe’s favorites.
Pumpkin Chili from Premeditated Left Overs
After convincing my family to try a new chili recipe, I was pleasantly surprised by this one. I was used to the traditional chili with a tomato base. The pumpkin pie spice, pumpkin, and some brown sugar take chili to a whole new level. Give it a try and I think you’ll be adding this to your Fall meal rotation.
Coconut Red Curry Squash Soup from Cooking Light
I’ve been making this recipe for years. Cooking light is one of my favorite magazines for easy healthy recipes. I love how silky smooth this soup is with the hint of spice and coconut flavor. And it’s so simple because it’s made in the crockpot. Then just get out your blender and dinner is served. Enjoy with a simple side salad or my favorite a grilled turkey, cranberry, and brie sandwich. Make it extra easy with precut butternut squash. You can find it in the produce section of your grocery store.
Pumpkin Crème Cold Brew (copycat Starbucks) from Fox and Briar
Who wants to shell out $5 for a coffee when you can make it at home? In fact check out my whole post here on saving money by making your favorite coffee drinks yourself. The pumpkin cream was easy to make with some left over canned pumpkin from another recipe. Then I just added it to my favorite cold brew coffee. It is pretty sweet, so a little goes along way. I stored the crème in my fridge for just under a week.
Pumpkin Pancakes from Savory Nothings
The perfect Fall breakfast treat. I love adding chocolate chips and enjoying with maple syrup. Or if you are a real pumpkin addict like me, enjoy with some pumpkin butter.
Pumpkin Oatmeal Energy Balls from Bless This Mess
I loved energy balls when I was pregnant. They were the perfect on the go snack and with natural peanut butter they packed the protein without the sugar. Even with a little sweetness from the honey and chocolate chips these easy no bake bites are a great healthy family snack. You probably have most of the ingredients in your kitchen already. I didn’t have chia seeds, so I omitted those but they were still delicious.
Trader Joe’s Fall Favorites
A classic must have for this time of year. I usually buy about 6 jars as soon as I see this on the shelf. This year I bought 8 because my local Trader Joe’s stores were sold out by the beginning of November. I didn’t want to chance running out as I enjoy pumpkin butter on everything from toast to pancakes until January. They also make great hostess gifts with a cute tea towel!
Autumnal Harvest Pasta Sauce and Soup
I can still remember the first time I tasted the Autumn Harvest pasta sauce, I knew my fall pasta dishes would never be the same. I replace regular marinara sauce with Autumn Harvest pasta sauce for spaghetti, home made lasagna, and ravioli. Then came the Autumn Harvest soup. I had always wanted an excuse to eat the pasta sauce straight and Trader Joe’s delivered. The soup is almost identical in taste but with more vegetables making it a hearty soup for a cold night.
Pumpkin Empanadas (NEW ITEM)
Trader Joe’s is always thinking of new ways to use pumpkin and for that I’m grateful. This year they’ve created these delicious flaky pumpkin filled bites of heaven. You better grab them before they sell out!
Don’t have time to make breakfast, but still want something seasonal on your plate? These frozen waffles are the answer. They may not be as fluffy as home made, but they will do in a pinch when you need your pumpkin fix. Use them to make a fried chicken waffle sandwich or top with an over easy egg.
Organic Pumpkin Bread
This was another new discovery for me this year, even though this may have been offered before. I love that this bread is almost healthy. ….. explain health factor. I enjoy it toasted with my tea or coffee. Top with cream cheese or of course pumpkin butter!
